With some fresh produce in hand, you’ll head to the chef’s house — where preparations for the lunchtime feast will begin. The cooking class is split between demonstrations and interactive portions, so you’ll be able to pick up some skills to bring the flavors of Jalisco home with you. All dishes are prepared just as traditional Mexican cooks would prepare food for their families — from scratch, with fresh ingredients, and with an eye towards Mexico’s rich culinary history. Drive into the countryside of Mexico’s renowned tequila-producing region for a tour and tasting at one of the most famous tequila distilleries in the world. Pass the agave fields en route from Guadalajara. Then, learn about the fermentation process and enjoy a taste of this national drink after exploring the town of Tequila with your guide. During the 1-hour drive to Tequila, stop to admire mountain vistas and the fields of agave azul (blue agave), the succulent plant used to make tequila, Mexico’s national drink. Declared a UNESCO World Heritage site, these blue-green patches of agave plants blend beautifully with the earth tones in the natural landscape. Stop for lunch (own expense) in Tequila, before heading to the nearby town of Amatitlan for your tasting at the Jose Cuervo distillery. Learn about past and present-day tequila production techniques. Discover tequila’s indigenous origins and the Spanish who distilled the beverage into the tequila known today. Watch the modern fermentation and distillation process of blue Weber agave, before a tasting of several different types of tequila aged in oak casks. Leave from Marina Vallarta at 9 AM and travel by boat to Los Arcos. Your instructors will teach you how to use the equipment and offer the basic theory necessary for your first dive. Jump into the water to experience your first dive. Take comfort in knowing your instructors will always be with you, and that each person has 2 air tanks with approximately 35 minutes of air. Make your Mole with a variety of nuts, spices, and cacao beans. Once you’ve prepared your Mole, put some in a jar to take home with you. Prepare and eat your Mole with rice and chicken or a vegetarian/vegan option.

Tapalpa, an alpine town south of Guadalajara, proudly owns this title. On this private tour, discover the picturesque pine clad hills, creeks, and small lakes that surround this small colonial town before visiting the indigenous village of Attaco. Get picked up from your hotel in Guadalajara at 9:30 AM and drive 2 hours south to Tapalpa. Upon arrival, take a guided tour of the town, its Central Plaza, ancient churches, and charming colonial architecture. See why Tapalpa's name speaks for itself, as it comes from the ancient nahuatl language and means "Land of Colors". In the town, sturdy wooden columns support whitewashed houses with red tile roofs and neat cobblestone streets weave around restored churches. Admire one of the most attractive towns in the state of Jalisco and its surrounding landscape. At 1 PM, enjoy some free time for lunch, with suggestions provided by your guide. At 2:30 PM, drive to the indigenous village of Attaco, just outside Tapalpa. This was the first village the Franciscans evangelized in the area, building a hospital for the natives that you'll visit. Walk around the living pharmacy of hundreds of medicinal plants used by the natives in a village that has preserved its ancient uses and customs. At 3:30 PM, begin your return journey to Guadalajara and arrive back at your hotel at approximately 5:30 PM.
