Meet your guide at the Godiva coffee shop before heading to explore a morning or afternoon market in Hoi An. Marvel at the seasonal fruits, noodles, herbs, vegetables, meat, and fish on display. Interact with the vendors and get some tips on how to bargain.  Then, paddle through the water coconut palms aboard a bamboo basket boat for 40 minutes. This is a must do! We spent the morning roaming around the market and learning about the local fruits, veg, meat etc and then took a coconut basket tour along the river. Which was so fun and beautiful. Then we started making lunch and it was incredible. The chef was super engaging and so knowledgeable, having worked in resort kitchens for 20 years. They were able to adjust foods accordingly to my nut allergy and pescatarian preferences. Just make sure to tell them before. Everyone was very helpful, engaging and kind! We loved it!

Thank you for this culinary sharing which made me live in another time, it is one of the best way to apprehend the culture of a country than to learn how one restores oneself. Vietnamese cuisine is like its inhabitants made of sweetness, fresh flavor, delicacy. It is an unforgettable experience!

We really enjoyed the market tour, would have loved to stop a little more and maybe try some of the food which was displayed on the booths. The boots trip was nice, but the music and touristic "performances" a little too much for our taste... Would have been nicer to see the nature and to enjoy the little canals around a little more. The cooking class again was really nice and we had a lot of fun trying the recipes.
