Hello Karima, maybe you will read this feedback too :-) I didn't cook the citron tajine yet, but the salt citron is still waiting in the fridge, just looking for friend who can borrow me a tajine vessel. We had a really nice day with karima. First at the market and in the souks see showed us her spots for fresh chicken, vegatables and fruits. You will see the chicken can't be more fresh and it reminds you what is behind the meat we buy in supermarkets. The selection and freshness of vegatables and fruits is just amazing, because the main part is produced in marroco. At karimas place she showed us, how to make mince tea in marrocan style and had time to become familiar in our small cooking class. Each step for preparing the meal was described in detail from karima, so it was really easy to follow. Sometimes she wants to help to much, so you've to slow up her ;-) The result, our meal, was really the most delicious thing i ate in marrakech and we was in a few good restaurant.
We loved our cooking class with Edwina, and appreciated the morning coffee and meal planning session, learning the market lingo in arabic, going to the market and getting her input not only on food but pretty much anything we had questions about, and of course the cooking itself. Edwina always has stories and anecdotes and knows much about Moroccan culture and food in general. She can be tough when needed but always gives positive feedback to finally end up with a surprising number of delicious dishes. As an added bonus, nothing is a secret and she sent us all recipes and even made some tomato salt with us on request which we could keep for free at the end. She also has a small selection of high-quality items available for sale (spices, oils), but will also tell you what to look for if you plan on doing your own market shopping. All around great experience, and while expensive for Morocco, definitely worth it!
Karima was the ideal guide for this activity. We were taken around the Medina's souk where we experienced the market through the eyes of a local, picking fresh ingredients for our tagine along the way, which would have been difficult for us without a guide. After going around the market, we were welcomed very warmly at Riad Thycas, where Karima showed us the proper preparation of mint tea, tagine and Moroccan salads. We were guided step by step to create the perfect dish, which was exceptional. The setting of the peaceful Riad made it even better. In a nutshell, I would highly recommend this activity for those who are interested in the tradition and culture of the Moroccan people.
Took this class with 4 friends, each person felt they received above adequate attention. Khadijah and her staff Tareek and Yaseen were patient, took the time to explain historical significance of some of the dishes, as well as went over more basic cookery techniques much to the male members of our party's delight. I would highly recommend this class to anyone looking for something close to the medina, quiet, and in an intimate setting. The recipes given at the end were an added touch.
Huge thanks to Karima and Sarah for making this class one of the highlights of our short trip to Marrakech. From the trip to the markets, to the preparation to eating the gorgeous food cooked with such expert instruction from Karima, the whole experience was an absolute pleasure. And it has inspired me to buy a tagine (an authentic Moroccan one!) and cook with it myself. Thank you!
